Traditional Moroccan Khobz Recipe

Ingredients

4 cups all-purpose flour
1 cup whole wheat flour
1 tablespoon instant yeast
1 teaspoon sugar
1½ teaspoons salt
2 cups warm water
1 tablespoon olive oil
Cornmeal or semolina for dusting

Instructions

1: Activate the Yeast
In a large bowl, combine the warm water, sugar, and yeast. Let the mixture sit for about 5 minutes until slightly foamy.
2: Make the Dough
Add the flour, whole wheat flour, salt, and olive oil. Mix until a dough forms.
3: Knead
Transfer the dough to a lightly floured surface and knead for 8–10 minutes until smooth and elastic.

4: First Rise
Place the dough in a lightly oiled bowl. Cover and let it rise in a warm place for about 1 hour, or until doubled in size.
Step 5: Shape the Bread
Punch down the dough and shape it into a round loaf about 1 inch thick. Place it on a baking sheet dusted with semolina or cornmeal.
6: Second Rise
Cover the loaf with a clean towel and allow it to rise for another 30 minutes.
7: Prepare for Baking
Preheat your oven to 425°F (220°C). Using a fork, gently prick the top of the loaf several times.

8: Bake
Bake for 20–25 minutes until the bread is golden brown and sounds hollow when tapped on the bottom.
9: Cool and Serve
Allow the bread to cool slightly before slicing and serving.
